You don't take the plastic covering off you just add the tape ontop of it, the plastic covering is added protection so taking it off would be a step in the wrong direction

Sounds like a big waste of money, seeing as how many of those carrots will go to waste.
But they won't go to waste as about 100,000 thousand of those members have also joined the group to make all their carrots into soup and give it to the homeless

To solve the squeaking you should take them apart and cover all the brass bushings with copper grease or similar, if you don't have any copper grease then you could use wd40, squirt some on the joints then bounce around a bit, and repeat until squeaking has gone.
Taping the spring is to protect the spring from impacts, there is usually a thin covering over the springs but this get chipped very easily and if the spring gets chipped and damaged it will significantly lessen its life.

Looks an amazing spot, looks a lot bigger on the video than i thought it was from the photo you put up. You could spend hours there, looks like there is something for everyone, small jumps upto huge ones. What is it actually?

There is a large group called B-bounce who own a gym in Bradfod, Stevie is the owner and normally welcomes people along to the gym. Send him a pm and see what he says.
Other than that use the search functions on the forum and put in Doncaster and other major towns around you and see who comes up

I am really not understanding this padding it with foam lark.  Surely this will make the problem worse, as it decreases the distance between the back of the leg and the spring mount, increasing the chance of impact? It means that instead of impacting a solid peice of metal you impact a soft bit of foam and therefore reduces the bruising
